The most common question we get is how do you calculate how much meat you get when buying a half or whole and how much will it be. This is a detailed breakdown of our process.

Our beef is primarily grass fed and grain finished, raised on quality grass pastures in Pittsburg, TX. It is free of growth hormones and antibiotics. When sold in bulk the beef is sold by hanging weight either by quarter, half, or whole steer. 

Types of weights 

  1. Live weight - this is the weight of the steer before it has been processed. We typically try to get the steer to around 1000-1200 pounds before processing. 
  2. Hanging weight - this is the weight after the steer has been butchered. This is the weight that the price of the meat is determined by. (It is typically 60% of the live weight)
  3. Take home weight - this is the amount of meat you will take 

Dorsett Cattle Company steers, when bought in bulk, are sold by hanging weight currently selling at $5.50/pound. For example: 1000 pound steer (Live weight) = 600 pounds (hanging weight) x $5.50 = $3,300. 

Your cost is $3,300 = ~400 pounds of meat = $8.25/pound 

Bulk sales are by the quarter, half, or whole.

Hind Quarter 

  • Round steaks- regular cuts or tenderized 
  • Sirloin steaks - regular cuts or boneless 
  • T-bone steaks - regular cuts or sirloin strips 
  • Rump Roast - whole or cut in half 
  • Sirloin Tip - roast or cutlets 
  • Pikes Peak - Roast or hamburger 
  • Flank steaks - whole or cutlets 

 

Front Quarter

  •  Chuck roast - roast, steak, or hamburger 
  • Arm Roast - roast, steak, or hamburger 
  • Club Steak - or ribeye 
  • Brisket - whole or boneless or hamburger 
  • Short ribs- Stripped for BBQ or hamburger 
  • Hamburger 
  • Hamburger patties 
  • Boneless stew meat
